Braised U.S. Duck Breast with Honey Pear Salsa

Serves 3

Ingredients

Salsa

50g yellow pear, diced
10g red onion, diced
1 pinch natural sea salt
1 pinch pepper
3g chopped coriander
10g orange segments
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp pure honey

Braised Duck

45g duck breast
5 tbsp dark soya sauce
5g sesame sauce
500ml water
3 star anise
2 cinnamon stick
1 tsp black peppercorn

Method

To Prepare Pear Salsa

Combine pear and red onion evenly with natural sea salt, pepper and chopped coriander. Add orange segments, lemon juice, olive oil and honey. Taste and put into a mold to shape it.

To prepare Braised Duck

Add all ingredients (except duck breast) in a pot. When liquid comes to a boil, add duck breast meat. Cover and simmer until meat is tender. Remove, slice thinly and serve with Pear Salsa.
