The Poultry Nutrition Seminar and the Food Hygiene and Safety Seminar organized by the USAPEEC Singapore office attracted approximately 80 participants from the food service industry.

The two seminars ran concurrently between 9 and 10 November, 2016 at the Lotte Legend Hotel in Ho Chi Minh City. The Poultry Nutrition Seminar was presented by celebrity chef, Norbert Ehrbar, where he provided an overview of U.S. poultry nutrition, safe handling and cooking methods for U.S poultry, turkey cutting demonstrations and product knowledge. The Food Hygiene and Safety Seminar was presented by Chua Kok Swee, former Deputy Head of Food Control Department in Singapore, where he covered topics such as basic knowledge of micro-organisms, food positioning and food borne infections, proper food storage, safe handling, and personal hygiene. The majority of the participants were certified chefs, sous chefs, trainee chefs, and students from culinary schools. The participants attended the two-day seminar, where each session lasted a full day.

The post-seminar evaluation results revealed that an overwhelming number of participants found the sessions interesting and informative. They further shared that they were more aware on poultry nutrition, food hygiene and safety after the two-day course.
