Fourth of July Celebrations go Virtual

 

As Americans all over the world commemorate the 4th of July, also known as Independence Day, this year’s celebrations are going to be unique. The event typically features a day full of fun, music, food, drinks, carnival games, and a spectacular fireworks display. This year, however, celebrations are going viral as countries adopt safe distancing measures due to COVID-19. But you can still fire up the grill with your own 4th of July recipes and watch the fireworks online. How about throwing a virtual party for family and friends to join in the revelry? Deck your home with streamers and flags, and dress up in red, white and blue, complete with hats, bells and whistles. Or you can exchange and drop off food baskets filled with classic American fare like burgers, hot dogs, chicken wings, potato salad and cupcakes. All set? Get on Zoom and join in the spirit of celebration! Happy Birthday USA!

Turkey may be the bird of choice for the festive season, but local chefs are increasingly looking for ways to spice up the bird to cater to the Asian palate for hot and spicy food. And because turkey meat is available all year round, they get to experiment with cooking styles and create new recipes, inspired by local favourites and cultures. If you ever thought turkey was bland, think again!

Singapore’s Anjappar restaurant is among the few in the region serving one of the most standout turkey dishes - Turkey Masala, a unique Indian tweak to the western staple. It takes a couple of hours to cook the chunky cubes of turkey in a pot of thick and rich Chettinad Masala with freshly blended ginger garlic paste. Full of flavor and spice, the famous Chettinad Masala inspired by the southern region of India, lends a hint of a roasted mix of cinnamon, cloves, cardamom and star anise to the tender meat. A must-try for those with a penchant for Indian food.

Spicing Up the Turkey

 

Known all over the world for its steamy and mouth-watering dishes, Thai cuisine has a reputation for being spicy. Moving away from cliché meat choices like the Basil Chicken, the Thai variation of its turkey offering is well worth a try. Red and juicy ground turkey is cooked to impeccable tenderness and paired with a savory and spicy sauce mix of soy sauce, sriracha and lime juice. Garnished with fresh Thai basil, the dish is primed to tingle your taste buds with bursts of flavors. Best served hot with a plate of rice or the healthier cauliflower coconut rice, the Spicy Thai Basil Ground Turkey never disappoints.

Brunch with an Asian Punch

 

The food of Southeast Asia can sometimes make you wonder why it’s so underrated when it comes to brunch. Sure, you can have your bacon and scrambled eggs. But now, you can just immerse yourself in a medley of local offerings like Garlic Fried Rice and the Filipino Breakfast Sausage. Tropical ingredients like coconut and an infinite variety of spices combine to define the culinary landscape of the tropical Indochine peninsula. What’s more? These Asian taste signatures have also spilled on to the menus of western brunches.

Vietnamese Vanilla Waffles

 

A popular street snack sold at stalls outside school districts is Bánh Kẹp Lá Dua, a type of pandan waffle. Pandan, or as the west calls it the “vanilla of Southeast Asia”, is the unique ingredient in this street snack, as well as coconut milk, another staple in Asian cuisine. The two blend together in perfect harmony to give a light, airy and crispy texture, and a spring green color to the waffles. They may look like any other breakfast waffles but get closer and its subtle pandan fragrance is sure to pull you in. Available only in Vietnam, the waffles are cooked in a mold of cast iron, heated with charcoal, and served hot commando style or with syrup.

Flipping the Omelette

 

Change up your omelette with the Torta. The Filipino take is generously filled with ground beef, chicken or pork, and vegetables like diced potatoes, commonly eaten at home. On a lazy Sunday, give powdered eggs a try when preparing the dish, and rehydrate the eggs with water or milk for a fluffier batter. While they’re pretty tasty on their own, the locals recommend pairing the savory and fluffy omelette with rice or condiments such as banana ketchup. For veggie lovers, you can try other versions of the Torta such as Talong which uses grilled eggplants for the extra crunch and the Tortang Gulay, packed with onions, bell peppers, and garlic.

Curious Taste of the Salted Egg

 

From popcorns, pizzas, potato chips to milkshakes, Singaporeans have caught on to the salted egg craze and there’s no letting up. At Runway80, a well-hidden gastropub located at the far end of Tai Seng street, the western favorite of chicken and waffles gets a new makeover. Crispy on the outside and soft on the inside, these waffles are paired with four tender buttermilk fried chicken thighs. For fans of the classic American taste, you can stick with the thick and sweet maple butter syrup. If spice is your choice, a creamy smooth salted egg sauce with fragrant curry leaves will go over nicely.

7-Eleven to launch in Phnom Penh in 2021

The 7-Eleven chain is set to launch in Phnom Penh next year. After signing the master franchise agreement with the Japanese-American owned 7-Eleven Inc, Thailand’s CP Group will operate the convenience stores through a local subsidiary. The CP Group owns the rights to use the corporate identity and logo and is authorized to conduct all business strategy and distribution activities of the franchise in the country.

Fast Food postpones expansion plans

Fast Food Indonesia, the operator of over 727 KFC restaurants in the country has deferred its expansion plans and closed 97 outlets due to the pandemic. To cope with financial challenges and closures, the company is adjusting the wages of its employees. Prior to the pandemic, Fast Food had allocated USD 38.4 million to open 20 new KFC restaurants, 5 KFC Box mini outlets and renovate the 150 existing restaurants.

 

Hokben launches new RTH meals and mobile app

Hokben, the local operator of the Japanese food chain has launched ready-to-heat meals such as Beef Teriyaki, Beef Yakiniku and Chicken Teriyaki in 200 gm pouches. Additionally, the food chain has launched a new mobile app to cope with the government-imposed social movement restrictions. Customers can place orders and pay online with the app. The orders are then processed at the nearest Hokben outlet for collection. Delivery services are also available. The chain currently has 170 outlets across Java, Sumatra and Bali.

Mygroser to expand after COVID-19 boosts sales

Malaysia’s digital grocer Mygroser is targeting expansions with an enhanced grocery list, new memberships and regional networks, after registering over a 1,000% growth in demand since early 2020. Mygroser achieved a ten-fold increase in revenues and delivery orders over the past two months. The online-only grocery service has also created more daily delivery slots and implemented other tech enhancements to meet the surge.

Burger King debuts social distancing crown

To welcome customers back to dining-in, Burger King debuted a social distancing crown at select outlets island-wide this month to remind customers to keep one meter apart. The novelty head gear is purposefully designed to keep customers and staff safe. Fans can also create their own version using recycled materials at home if stocks run out. The crown follows the franchise’s string of creative campaigns in Singapore, including a cheesy music playlist on Spotify to promote the launch of its BBQ Cheesy Trio Burger last month. Burger King joins other restaurants that have also implemented safeguarding measures such as table top separators, counter shields, kiosk separators and booth dividers for dining-in patrons.

 

Government launches tender for urban farming

The Singapore Food Agency (SFA) is partnering with the Housing and Development Board (HDB) to launch tenders to farm vegetables and other food crops, and activities like packing and storing produce on rooftops of multi-storey car parks. The urban farming sites include five individual sites (Choa Chu Kang, Tampines, Hougang, Ang Mo Kio and Toa Payoh) and two cluster sites (Sembawang and another at Jurong West). According to the SFA and HDB, the individual sites will be used to testbed innovative ideas while cluster sites will enable production at scale and encourage cost savings. The movement is part of Singapore's plans to produce 30% of its nutritional needs locally by 2030.

 

Marks & Spencer partners with Pandamart for packaged items

Marks & Spencer Food is teaming with Foodpanda’s grocery delivery service, Pandamart to fulfil orders of packaged foods for customers. Consumers can choose from over 300 food and drink items with the commitment to deliver under 30 minutes. In Singapore, the service is only available at locations near Wheelock Place, VivoCity, Parkway Parade and One Raffles Place. The service is set to launch in Malaysia later this year.

Whether it's for a family dinner or an appetizer for a party, Charcuterie Boards have become the essence in household gatherings. While the French charcuterie first rose to prominence in the 15th century, the assortment of cured or smoked meats and cheese boards have spiraled into a massive trend in Asia recently. Loaded with a variety of cured meats, cheese, nuts, fruits, crackers and jams, these Insta-gramable and delicious artsy spreads are a sight to behold.

Eat Off the Grazing Board

 

The Social Ones in Singapore are embellishing dining tables and picnic baskets with their exquisite platters. Pick from a choice of Farm and Intimate Platters for two to four, the Together Platter for five to eight, or the Social Platter for a group of ten to fifteen persons. Wet markets in Singapore have started to play a totally different ball game, turning to live-streaming to sell fresh food. Through its newly launched Facebook page, Singapore’s Tekka Online Market takes orders from the comments section. Confirmation and delivery details are exchanged privately with customers via the Facebook Messenger app. Other services include PayNow, an instant payment service, as well as same day island-wide deliveries. On the other hand, The Meatery’s take on a wet market butchery is already leveraging online sales and delivery models. With a wide curation of halal-certified prime meats, the Muslim-owned gourmet store is changing the perception of butcheries to satisfy the more discerning palates. Renowned British Chef Heston Blumenthal personally recommends the Organic Kampung Chicken and Silver Hill Duck Breast Fillet at The Meatery.
