USAPEEC Singapore had collaborated with SHATEC, Singapore’s oldest established hotel training school to introduce U.S. poultry lessons in their regular culinary curriculum.
Following the completion of theory-based classes in the application and use of different poultry parts, the culinary students finally had the opportunity to test the skills learned by preparing a selected chicken dish. In this practical class, the students learned to prepare a chicken kiev dish. The ingredients were prepared from scratch including cleaning, cutting, stuffing with butter, and breading of chicken. Participants had to prepare the main accompanying ingredients including the salad, as well as frying sliced potatoes, within a designated time frame. Upon completion of the practical lesson, the students displayed their finished product on the judging table, where they were assessed individually by SHATEC’s lecturer-chefs.
