The student competition organized jointly between USAPEEC and SHATEC, Singapore’s oldest established hotel school, generated tremendous interest and excitement among the culinary students who were eager to display their creative talents.

The event marked the highlight of the poultry curriculum course for students undergoing the culinary course at the hotel training school. Ten teams of two participants each took part in the competition. The competitors were given the latitude to purchase their own ingredients and prepare the dishes ‘mise en place’ style. Competitors were allowed to select either duck or chicken as the main protein dish. The event witnessed high creative energy among participants resulting in very unique ingredient use and methods of preparation in the final dishes presented for judging. The recipe of the winning team will be featured in the Sapling, SHATEC’S training restaurant for two weeks during which a U.S. menu promotion featuring poultry dishes will be carried out.
