On August 28, 2025, USAPEEC, with support from the Illinois Soybean Association, held a Food Safety and Cold Chain Seminar for Enzo’s Meat Market in Cebu with 27 participants from retail, logistics, and storage teams, including the owner.
Ms. Monica Regaspi introduced USAPEEC and the U.S. poultry industry, followed by a technical lecture from Certified ServSafe Instructor Rommel Gerodias on cold chain handling, temperature management, and transport protocols.
The session featured case studies, open discussions, and a Kahoot quiz, which reinforced lessons in a lively way. Participants found the training practical and timely, with the owner noting its added value compared to previous government programs.
The seminar was seen as vital in shifting perceptions about frozen meat in Cebu, where scepticism remains. Recommendations included targeting more independent retailers in provincial markets, and providing tools like guides, posters, and checklists alongside interactive activities to strengthen knowledge retention.
