Singapore Hotel and Tourism Education Centre (SHATEC), Singapore’s oldest established culinary school organized a poultry practical class for its culinary students. The class was open to students undergoing the full culinary semester including the U.S. poultry curriculum course. The students were eager to show off their culinary skills by preparing a dish called chicken fricassee. The group kicked off the practical session by cutting and preparing the basic ingredients including the sauce for the chicken dish. Upon completion, the dishes were laid out for judging by the chef-lecturers at SHATEC. The program is being sponsored and supported by United Soybean Board (USB) and USAPEEC. This practical session is an integral part of the poultry curriculum course as it reinforces knowledge gained during the theory classes on poultry nutrition, handling, and preparation.
