Ingredients

U.S. Duck Breast Cubes (Skin Off) – 1kg
Egg – 2nos
Potato Starch – 200gm

Duck Marinate Ingredient
Salt – 10gm
Water-50gm
Potato Starch -20gm
Chinese Wine-20gm

Crispy Garlic, Dried Chili, Preserved Black Bean and Scallion
Fried Garic Minced -500gm
Dried Chili Cut – 30gm
Preserved Black Bean -15gm
Scallion -40gm
Dried Shrimp Powder – 10gm
Chili Powder – 15gm
Salt – 15gm
Sugar 60gm
Chicken Powder 30gm

Cooking Method

  1. Marinate U.S. Duck Breast Cubes for 2hours.
  2. Coat with Egg and Potato Starch and deep fry with Cooking Oil at 190°C for 20 seconds. Duck texture should be medium.
  3. Heat up the pan add in the Crispy Garlic mixture and slowly heat it up, once, crispy add in the U.S. Duck Cubes after that. Toast it well and then ready to serve.
