Ingredients

U.S. Turkey Diced Breast (Skin Off) -300gm
U.S. Duck Diced Breast (Skin Off) -300gm
U.S. Chicken Diced (Skin Off) -300gm
Celery Cubes – 100gm
Chopped Onion – 50gm
Chopped Garlic – 10gam

Garnish
Tobiko

Marinate Ingredients
Salt – 10gm
Chicken Powder -15gm
Potato Starch -10gm
Chinese Wine -10gm

Green Sichuan Pepper Sauce
Green Chili – 100gm
Coriander – 50gm
Spring Onion – 50 gm
Ginger-15gm
Garlic-10gm
Sichuan Peppercorn Powder– 20gm
Fragrant Oil – 100gm
Salt -10gm
Chicken Powder -20gm
Oyster Sauce -10gm

Cooking Method

  1. Put all the green pepper sauce ingredients into the blender and blend until the sauce is smooth and then set aside
  2. Marinate U.S. turkey, duck and chicken for 10mins
  3. Heat up a pan, add oil, add diced U.S. turkey, chicken, and duck into the pan and stir-fry, season with green pepper sauce, put in paper-thin mini tart shells, add garnish and serve.
