A gap in the market is being filled by non-alcoholic cocktails or concoctions that are carefully thought through, that cost just as much as alcoholic drinks1.
Have an important meeting the next day, suffering from allergies or simply just being health conscious2? There are many reasons why people choose not to consume alcohol. In Singapore, there are bars and restaurants that recognise this.
An Aviation, a cocktail available, at Atlas Bar in Singapore will get you a butterfly pea flower water and lemon juice concoction, instead of the crème de violette and maraschino liqueur that the original cocktail comprises2. Based on reviews, it looks and tastes the same as its alcoholic counterpart.
Mark, the owner of Atap opened the first non-alcoholic bar in Singapore. As a non-drinker himself, he wanted to create an environment where patrons can enjoy the ambience and cocktails of a regular bar without compromising their preferences or faiths. Some of his famous cocktails include the Ewah Bule made with sparkling passion fruit juice, fresh lime, muscovado juice, soda and topped with mint leaves.
The Origin Bar in Singapore introduced Chewing Gum Mule on its non-alcoholic drinks menu. A take on the spicy and refreshing Moscow mule, this version makes use of longan, raspberry, mint, lemon and ginger that delivers the same heat.
Zén, a flagship restaurant in Singapore from the three Michelin-starred Frantzén in Stockholm, has created a new way of dining with non-alcoholic beverages. Juice pairing takes pride in place beside its wine pairing menus3. Marcus Jernmark, executive chef of Frantzén who is currently in Singapore claims that guests who don’t drink deserve the same dining experience as guests who do. This gave birth to juice pairing which is given the same amount of precision and attention as wine pairing.
