The USA Poultry & Egg Export Council orchestrated a seminar dedicated to cold chain management and optimal fry preparation techniques for volume chains. Hosted at Seda Hotel in Cebu City on November 9 and 10, 2023, the event drew 86 participants, including members from the Research and Development teams, purchasing departments, and kitchen staff of three prominent volume chains in Cebu: Abaca Group, NY Buffalo Brad’s, and Casa Verde.

Seminar on Cold Chain Management and Optimal Fry Preparation Techniques

The seminar featured insightful sessions, notably one by Mr. Rommel Gerodias, a certified ServSafe instructor, on the critical aspect of cold chain management in ensuring food safety. Further enriching the event, culinary consultant and instructor Chef Alvin Ong provided demonstrations and shared insights into proper fry preparation techniques, including a hands-on recipe demonstration for fried chicken. The primary objective of the seminar was to augment the knowledge and skills of participants in cold chain management and fry preparation, with the ultimate aim of elevating the quality and safety of food served by the participating volume chains.

Thanksgiving Dinner featuring U.S. Turkey and Duck Dishes

In another collaborative effort, partnering with Potatoes USA, the USA Poultry & Egg Export Council organized a Thanksgiving Dinner event on November 21, 2023, at the Seda Hotel in BGC, Taguig City. This dinner brought together a distinguished assembly of trade partners, including Mr. Michael Ward, the USDA Foreign Agricultural-Manila Agricultural Counselor, and Mr. Boy Tiukinhoy, President of the Philippine Association of Meat Processors Inc. (PAMPI). The guest list also included members of the Meat Importers and Traders Association (MITA), foodservice professionals, retailers, and chef consultants.

The event aimed to showcase and propagate the tradition of Thanksgiving by featuring a recorded cooking demonstration of a U.S. Thanksgiving turkey recipe, presented by Chef Ivory Yat. Furthermore, the dinner provided a platform for attendees to experience and relish U.S. Turkey and Duck, emphasizing the exceptional quality of these products. Beyond this, the event played a crucial role in fortifying collaborative relationships and advancing the positioning of U.S. poultry products within the market, potentially sparking increased interest and demand among industry stakeholders.
