Butter U.S. Chicken Curry

Butter chicken curry is a popular and iconic Indian dish that features tender chicken pieces stewed in a velvety tomato-based sauce infused with butter, cream and aromatic herbs. It is typically served with fluffy rice or Indian bread such as naan and roti. The following is Chef Jerome Rezel’s take on the flavorful dish, which he demonstrated to a class of culinary students.

 

Ingredients

  • U.S. Chicken Leg – 1kg
  • Chili Powder – 20g
  • Star Anise – 2 pcs
  • Cinnamon – 1 pc
  • Cashew Nuts – 100g
  • Cardamom – 4 pcs
  • Cloves – 4 pcs
  • Cumin Seeds
  • Coriander Powder – 10g
  • Cumin Powder – 10g
  • Tomatoes – 300g
  • Onions – 200g
  • Bell Peppers – 100g
  • Butter – 200g
  • Cream – 100g
  • Garlic – 10g
  • Garam Masala – 20g
  • Salt – to taste

Method

  • Marinate the chicken with salt, chili powder, cumin powder and coriander powder (keep aside for 2 hours)
  • Roast the cinnamon, star anise, cardamom and cloves and grind them into a powder
  • Sauté the garlic, onions, tomatoes, cashew, chili and blend everything into a paste
  • Sauté the chicken with butter and add onions, tomatoes, cashew paste, salt, cumin, coriander powder, garam masala, cream and bell peppers
  • Let the dish reduce and taste and adjust seasoning as desired

Ingredients

  • Basmati Rice – 1kg
  • Ghee – 50g
  • Onions – 200g
  • Tomato – 100g
  • Ginger – 10g
  • Garlic – 10g
  • Fresh Coriander – 50g
  • Fresh Mint – 50g
  • Chili – 60g
  • Cinnamon – 2 pcs
  • Star Anise – 5 pcs
  • Cardamom – 8 pcs
  • Cloves – 10 pcs
  • Cumin – 1 tsp
  • Fennel Seeds – 1 tsp
  • Biryani Masala Powder – 2 tbsp
  • Cashew Nuts – 100g
  • Raisins – 100g
  • Saffron – 2g
  • Rose water – 2 tbsp

Method

  • Soak the rice for 1 hour 
  • Add ghee to a pot
  • Sauté all the dry ingredients together 
  • Add in onions, garlic, ginger and chili and sauté till flavor comes out
  • Add the rice and water using a 1:2 ratio
  • Once the rice is 90% cooked, add saffron (for color), fried cashews, raisins, coriander and mint
