U.S. Chicken Thigh And Mango “En Papillote”

Serves 2-3

Ingredients:  

2 pcs of U.S. Chicken thigh, boneless, skinless (diced)
1 tbsp of Plum Sauce
1 tbsp of unsalted Butter
1 pc of medium size Mango (diced)
2 tbsp of Orange juice
½ tsp of Pink Pepper Corn
1 tbsp of Chinese Parsley (shredded)

Preparation Method:      Marinate diced chicken with Plum Sauce and pepper for 5 minutes.  Place in center of aluminum foil measuring approximately 20 x 20 cm.  Top with butter, mango and orange juice.  Fold to a well-closed parcel.  Bake at medium heat for 35 minutes or until parcel pops up.

To Serve:       Set on plate and carefully open with a cross-cut.  Add parsley in the center before serving.
